Lemon Drop Mascarpone Cookies

This amazingly light and creamy cookie recipe came to me many years ago from a co-worker along with an insane Fruity Pebbles Cookie recipe. Unfortunately, I don’t make the Fruity Pebbles ones very often as no one else seems to think they are as cool and Saturday-Morning-Cartoon-Watchingly reminiscent as I do, but these Mascarpone Lemon cookies were an immediate hit in my family.

They quickly became a staple for Spring parties, as the hint of citrus just screams “lets run around a meadow with no shoes on!”, but they are also just as good the rest of the year.  And as a bonus, they can be decorated in any color or theme to match your event!
